Does Gollum have the one true ring? If so, the gold would choke the Cyberman's respiratory systems.
If he does not have the ring the Cyberman would begin a cyber conversion process. However, the incessant schitzophenic chattering would soon blow his brain circuitry.

Cybermen always come second.
Although my loyalty to the Doc and anything remotely connected to him makes me uncomfortably consider the option of just forgetting how totalz awezome gollum is and going for the shiny metal dalek understudies.
This is horribly tricky. But I think I'm going for gollum.
Cybermen have flares.
Gollum. No reason, I just say Gollum.

I'm thinking the Cyberman pretty much has to win. I mean, how do you kill one of them anyway? They even have The Doctor running scared, and that says more than enough for me. Gollum's gonna get his precious ass handed to him!

Hmmm... Quite the match up.
My head says cyberman, my heart says gollum, my feet say tie, my elbow is asleep so is unable to comment at this time.
The only way I see gollum winning, even with his inate finger biting prowess, is if he is in possesion of the ring he's gotta put it ON the cyberman. Resulting in a flood of human emotions which would render said combatant insane in the motherboard, which would open him up to some ferocious finger biting and lead to his ultimate demise. But does the slimey little fink have the "hobbits" to do it?
NO ring. NO contest. PLUS no volcanos can be present at the match.
If Samwise can beat his arse down. Cyberman could.
